Blueberry - Lemon Muffins

  • Large eggs(3 pcs)
  • Sugar(65 g - ⅓ cup)
  • Plain Greek Yogurt(140 g ½ cup)
  • Unsweetened applesauce(65g - ¼ cup)
  • Honey(2 Tablespoons)
  • Vanilla extract(1 teaspoon)
  • Lemon zest (2 tablespoons)
  • Lemon juice(60 ml - ¼ cup)
  • Whole wheat flour(195 g - 1,½ cup)
  • Baking soda(1 teaspoon)
  • Baking powder(½ teaspoon)
  • Salt(1 teaspoon)
  • Blueberry(100 g - 1 cup)
  • Step 1 Whisk the eggs and sugar in a large bowl.
  • Step 2 Add in all but the dry ingredients, and make sure they are all mixed well.
  • Step 3 Stir in the dry ingredients to the mix until you get the perfect smooth batter.
  • Step 4 Gently fold in the blueberries, careful not to crush them, before distributing the batter in the greased muffin cups.
